Der Wert von NCF bezieht sich auf die Aminos\u00e4urezusammensetzung der Proteinquelle und auf das eventuelle Vorhandensein von Seitengruppen, die kovalent an einige Aminos\u00e4uren der Proteinkette gebunden sind.
