Sie dient als Indikator f\u00fcr eine ordnungsgem\u00e4\u00dfe Milchpasteurisierung. Durch die vollst\u00e4ndige Pasteurisierung wird das Enzym auf ein so niedriges Niveau inaktiviert, dass es mit herk\u00f6mmlichen Methoden nicht mehr nachweisbar ist. Da die Hitzestabilit\u00e4t der ALP h\u00f6her ist als die von m\u00f6glicherweise in Milch vorhandenen Krankheitserregern, dient das Enzym als Indikator f\u00fcr die Produktsicherheit. Ein fehlender Nachweis der ALP-Aktivit\u00e4t garantiert jedoch nicht, dass das Produkt frei von Krankheitserregern ist. Der aktuelle ALP-Schnellteststreifen basiert auf der chemischen Reaktion der ALP mit ihrem Substrat zum Nachweis der ALP-Aktivit\u00e4t in pasteurisierter Milch.
